Ingredients:
2 5oz chicken breasts cut into cutlets
1/2 cups whole wheat panko
½ cup almond flour
¼ cup bran flakes
½ cup grated parmesan
1 tbsp Italian seasoning
1 tsp garlic powder
1 tsp chili powder
¼ tsp salt
¼ tsp pepper
2-3 eggs
Olive oil spray
1 cup tomato sauce (Rao’s Marinara)
½ cup shredded part skim mozzarella cheese
Chopped basil for topping
Directions:
In a shallow bowl combine the breadcrumbs, parmesan, almond flour, bran flakes and all seasonings. In a separate shallow bowl whisk the eggs with salt and pepper. Dip chicken into the egg, then coat in breadcrumb mixture pressing the breading into the chicken. Place the coated chicken onto a clean plate. Place chicken in air fryer basket and spray with olive oil spray. Cook for 5 minutes at 390F, then flip chicken and cook for 5 additional minutes. Top each chicken with sauce, mozzarella and parmesan. Cook for 2-3 more minutes until cheese melts.
