Ingredients:
🐟Salmon fillets
🐟1/2 cup pistachios
🐟2 tbsp olive oil
🐟1 lemon, juiced
🐟1 tbsp dijon mustard
🐟Salt and pepper
Pesto:
🐟1/2 cup pistachios
🐟1/4 cup olive oil
🐟Salt and pepper
🐟Bunch of spinach
🐟2 1/2 tbsp chopped parsley
Directions:
Cut the salmon into individual portions and place each on tin foil. In a bowl, mix the lemon juice and dijon mustard. finely chop the pistachios and set aside. Season the salmon well and add the lemon and dijon sauce with the help of a spoon. Next, top the salmon with the crushed pistachios and close the salmon with the tin foil. Roast in the oven at 375•F for 10-15 minutes
Pesto:
In a food processor add the second 1/2 cup pistachios, salt, pepper, spinach and parsley. Slowly stream in the olive oil and process until smooth.
