Ingredients:
⦁ 6 eggs
⦁ ½ cup lactose free milk
⦁ Feta
⦁ 1 cup diced sweet potato
⦁ ½ zucchini grated
⦁ 1 cup spinach
⦁ Spice of choice
Directions:
⦁ Preheat oven to 355F, line a pan with baking paper
⦁ Add chopped sweet potato to a microwave safe bowl and microwave for 1-2 min until slightly softened
⦁ Add sweet potato, feta, zucchini and spinach to the prepared pan
⦁ Whisk together eggs, milk, paprika and rosemary and pour onto pan over the veggie mix
⦁ Bake for 45min
