Ingredients:
1 tbsp extra virgin olive oil
2 garlic cloves, minced
3 large zucchini, cut into rounds
½ tsp dired oregano
Kosher salt and pepper to tase
Pinch of crushed red pepper flaves
½ cup freshly grated parmesan cheese
Directions:
In a large skillet over medium heat, heat olive oil. Add garlic and cook until fragrant for about 30 sec. Add zucchini and oregano. Cook until zucchini is tender for about 10 minutes. Season with salt, pepper and pepper flakes. Top with parmesan and serve warm.
